Recipe for Healthy Strawberry Blueberry Muffins

Who wouldn't want to wake up to these warm, delicious and healthy muffins on Sunday morning?  These muffins are very simple and quick to make and best of all they have healthy rolled oats, greek yogurt, honey, fruit and nuts and very little sugar or flour!

Yield:  Makes 6-7 muffins

Prep Time: 15 minutes

Preheat oven to 350 degrees.  Line or oil a muffin tin and set aside.  In a large mixing bowl, combine the butter, egg, yogurt, vanilla and honey.  In medium mixing bowl whisk together the flour, oats, brown sugar, baking powder, baking soda and cinnamon.  Add the wet ingredients to the dry ingredients and mix until combined (do not over mix).  Add the strawberries, blueberries and nuts and stir until they are incorporated into the batter.  Fill the muffin tin with approximately 1/3 cup batter.  Bake for 20-25 minutes or until the tops of the muffins are golden brown and a toothpick comes out clean when inserted into a muffin.  Let cool for 5-10 minutes before removing from the pan and serving.

Ingredients:

  • 2 Tablespoons butter (softened)
  • 1 egg
  • 2/3 cup plain Greek yogurt
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 3 tbsp honey
  • 3/4 cup flour
  • 3/4 cup rolled oats
  • 3 tbsp brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/3 cup fresh blueberries
  • 1/3 cup fresh strawberries cut into small pieces
  • 1/3 cup chopped walnuts (optional)
