Grilled Watermelon and Shrimp Salad

My husband recently told me that he read about grilling watermelon and I was like, wait, what???  You can do that?  Then my mind began to ponder all the amazing ways you could serve up some grilled watermelon.  All summer long I've been trying to think of a creative way to serve grilled shrimp.  But grilled shrimp with grilled watermelon?  Oh lord, I think we found a winner.  I was super nervous about the dish turning out because we had invited guests over for dinner, but it was fan-f-ing-tastic.  I added Thai inspired spices to counter the sweetness of the watermelon and bring out the flavor of the shrimp.  If your looking to wow your guests at your next cook-out, give this salad a whirl.  

Yield: Serves 4

Ingredients: 

  • 6 triangle shaped slices of watermelon
  • 12 peeled and de-veined shrimp
  • 1 handful fresh chopped mint
  • 1 handful fresh chopped basil
  • 1 fresh squeezed lime
  • 2-3 chili peppers (fresh or rehydrated)
  • 1 tsp coriander powder
  • 1 tsp salt

Remove the tails from the shrimp and place them onto skewers.  Season lightly with salt and pepper.  Grill the shrimp for about 3 minutes on each side.  Grill the watermelon for approximately 15 minutes or until well charred.  After removing the shrimp and watermelon from the grill, set them aside to cool.  Once cooled, cut up the watermelon into one inch pieces and place into a large bowl along with the shrimp.  Add the basil, mint, lime juice, chilies, coriander and salt and toss.  Serve at room temperature.
