Ham and Cheese Scones

Lately I've been craving savory baked goods for breakfast, or lunch, or an afternoon snack, or a morning snack or a late night snack.... well you get my point... I'm craving melty cheese and salty ham wrapped up in a buttery biscuit like Martha Stewart craves hospital corners.  I concocted this recipe and I must say this is the best savory scone I have ever made, no lie.  I made them this past weekend while my Mom and her partner were visiting and they were a huge hit with everyone.

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 tbsp baking powder
  • 2 tsp sugar
  • 1 tsp salt
  • 1 tsp paprika
  • 4 tbsp chilled butter, cut into small pieces
  • 1 cup shredded sharp cheddar cheese
  • 1 cup finely chopped ham
  • 1/2 cup chopped scallions
  • 3/4 cup whole milk
  • 1/2 cup sour cream
  • Cooking spray

Directions:

Preheat oven to 400 degrees.  Combine the flour, baking powder, sugar, salt and paprika.  Cut in the butter until the butter is in pea size pieces.  Add the cheese, ham and scallions and mix until the ingredients are evenly distributed.  In a separate bowl, whisk the milk and sour cream together.  Add wet ingredients and stir until the dough forms into a ball.  Roll out onto a floured surface into a one inch circle.  Cut into 12 pie shaped pieces.  Spray the baking sheets with cooking spray and place the scones, leaving about an inch room between them.  Bake for 22 minutes.
